American Seafood Cook Off

I like simple and easy recipes, the one that won't take me long in the kitchen to prepare because I have a very demanding toddler to take care of. One simple seafood dish that I like to make is Baked Shrimps with Ritz crackers, it only takes 15 minutes to bake and dinner will be served in no time. This simple dish originally calls for scallops but since scallops are usually pricey, I can't afford to make it often. Shrimp is the very convenient substitute to scallops as I have them stocked in the fridge all the time. This dish only calls for a pound of shrimps; 10 to 12 pieces of Ritz crackers, ground; 6 tablespoons of butter, melted; salt, pepper and garlic powder. For I just add cayenne pepper or red pepper flakes for some kick. I just coat the shrimps with half of the melted butter then sprinkle them with salt, pepper, garlic powder and cayenne pepper. Then I cover them with ground Ritz crackers and pour the rest of the butter over to brown it up. I bake it at 375 deg. F preheated oven for 15 minutes. That simple!

My Son Talks No End

When I thought my son had speech delay I got worried. Although he babbled a lot we just couldn't understand what he was talking about. And then at 21 months, he started talking and he never stopped talking since then. Sometimes he drives me nuts when he talks no end during the day. He repeats everything I say all the time. If I ignore him the more he will not stop, but if I answer him then I just introduced new words for him to repeat over and over again. Oh it was so true what other moms told me that I shouldn't worry at all about him not talking yet because he will talk soon anyway. And they warned me too that when that happens, I might wish he hasn't talked this soon. Hmm, I guess they're right ;-). I can't help but remember that news about a mother and her son who were bumped off a plane because her son never stopped saying "bye-bye airplane" since the plane took off to the annoyance of all the passengers. Geez, I hope that won't happen to us as we planned to visit the Philippines next year. It's a long trip no kidding.

I Love Freebies

I've been maximizing the freebies I got from Gymboree, unlimited free sessions for summer. So almost everyday I bring my son there to attend other classes, or for art and music. Though he didn't like the music and art classes that much, I suspect that maybe it was due to very small venue. He likes it better in the gym where he can run around, climb up, jump and slide. But overall, its good to get freebies like this and I really maximize its benefits. Thursday class is the one I love the most because kids get to be with the teacher for 15 minutes for snacks and story time. So that means moms can chat and be kid-free just for few minutes! Weekend in Boston

The daily grind of office work and household chores can be very tiresome so we escape once in a while to Boston for some impromptu sight seeing trips. There are so many things to do in Boston, being the state rich in history you will expect to see a lot of museums and tours to historical spots like the John F. Kennedy Presidential Library and Museum. JFK Library and Museum is one of our favorite places to visit because right there in the recreated world of JFK, we can experience first-hand, his life, legacy and leadership. In our last visit to Boston, we took the Old Town Trolley Tours, an exciting one hour and 45 minute fully narrated tour of Boston which covered over 100 points of interests. Plus we got the 'hop on/hop off' privileges at any 17 designated stops, meaning re-boarding is free all day. We got to see the Boston Freedom Trail, New England Aquarium, Faneuil Hall Marketplace, USS Constitution, MIT, Old State House Museum and a lot more! Last Lecture Professor Died

Remember Randy Pausch, the professor whose "last lecture" about facing terminal cancer became a YouTube sensation on the internet and then was turned into a best selling book? Sadly he died Friday morning of pancreatic cancer, he was 47. Randy Pausch was a computer professor, he delivered his lecture about "Really Achieving Your Childhood Dreams" at Carnegie Mellon in September 2007. That time was a month after he was given by his doctor with only three to six months to live. Actually he even surpassed that and lived to almost a year from the time he received the sad news. Randy was very funny and he touched so many people for turning his life around after a 'death sentence'. Instead of sulking in tears he instead turned his last days worthwhile and touched so many lives with his lecture. In his lecture he mentioned about the importance of persistence, that the 'brick walls' are there for a reason,,,,to show us how badly we want something. He also said "I don't know how not to have fun. I'm dying and I'm having fun. And I'm going to keep having fun every day I have left." Pausch is survived by his wife, Jai, and three children. Five Year Old Slipped Out of Day Care

A five year old boy has slipped out of a day care unnoticed and had quite an exciting adventure. He crossed two busy roads, stopped by a gasoline station to buy soda and snacks and ended up a half-mile away at a Hooters restaurant. Wow, its amazing how the boy has managed not to get hurt out on busy roads just by himself. He was spotted by the manager and staffs of the Hooters who called to the police when they noticed he didn't have any chaperone. According to the day care owner, the boy just asked permission to go to the bathroom and probably went out to the fire exit which by law should be kept unlocked. Apparently the Imagination Station day care has had at least 8 violations in the past and the most recent one was just in April. Two of the citations were for improper supervision. Hmmm, I wouldn't put my son in a day care cited for improper supervision would you? They should escort children going to the bathroom from now on and they should install proper alarm so they can monitor the children left under their care. It's good thing nothing happened to the boy, Imagination Station is still lucky.

Stormy New England

I couldn't believe I was still out driving yesterday in the middle of a storm, the stage mother in me. I knew about the storm watch but I just didn't want to miss a playdate that I RSVPed Yes for Mikey. It was KinderMusic, a play and music activity with other moms and little ones in my 'Moms and Little Ones' group. Anyway, after the event, I knew it was gonna pour down rain, the cloud was really dark and the wind was blowing relentlessly. I didn't even got the chance to talk much to my girlfriend moms. Then the strong rain began to pour down, it was almost zero visibility and the wind was blowing like it was trying to lift my car up in the air, it was frightening. But I just drove slow but sure until I reached home. Then when I checked the news on TV, there was a town in NH that was badly hit by a tornado. Would you believe, few days back there was a tornado watch too in MA? Wow, I didn't know we get tornado too in the east coast. Anyway, I'm just glad that the storm finally settled and today we have a very nice sunny day.

One Day Rollback

The long line of motorists backed up for miles as they waited for their turn to fill up their tank of gas as early as 5:30am today. A Gulf gas station in Worcester, MA announced that it will sell their fuel at cut-rate prices at 7am. Wow, imagine filling up your tank at $1.99 a gallon instead of the average $4.09, even just for a day. Monday Madness

Monday is always hectic for me, it is the day where I do most of my chores in the house. As much as I can avoid it, I don't get appointments on Mondays, so I wont need to get out of the house. While I was doing the chores, Mikey is of course around me wanting to get his hands in everything I do. But he was behaved as the Baby Einstein dvd is on, he comes and goes, peeks and touches. I still have to change all the beddings and load them in the washer. And then when Mikey wakes up, I will take him for a walk around the neighborhood. Oh well, mothering and housekeeping are a never a ending job. He is awake now, I have to change him, feed him and take him for a walk.

Called Home

Finally I had the chance to talk to my mom. I used to call her more than once a week, but recently it went down to once a week, and sometimes every other week. Honestly I feel guilty about not calling home like I used to. The demands of everyday chores sometimes make the thought of calling slips my mind. By the time I settle and can actually make the phone call, its already late in the Philippines and they should be in bed resting. Anyway, I called them around 8am and tatay picked up and I talked to him for a while. The line in Cavite is always choppy for some reason, and tatay had a hard time hearing, so we didn't talk much but its so good to hear his voice again. Then he passed the phone to nanay and we talked for hours. She talked about my niece Yannah whom they adore so much, talked about her new antics and her adventures in pre-K school. She's very smart and so active like a boy and she's almost 3 years old. They are teaching Yannah to speak in English so she can communicate with Mikey when they meet. But I'm also trying to teach Mikey Tagalog so he can understand Yannah. Children can still mingle with one another anyway despite not speaking the same language, they can adapt to a situation easily and quickly. But learning two languages is even better.

Oh No Hubby Is Cooking

Ok don't get me wrong, I really appreciate it when hb cooks, he cooks really great dishes, in fact he's got quite a lot of cookbooks already even before we met. Just before I sat here again, I was in the kitchen cleaning up after hb's mess. I washed all the pots and utensils he used, put away all the ingredients back to the cupboard; closed all the cabinet doors left open; vacuumed the floor, cleaned the counters and took the garbage out. I love it when I don't have to cook anymore, but when hb volunteers to cook I will ask him "do you really have to?" ;-). But seriously, hb cooks really well so I should probably settle for that, next time I will try not to mind the mess, LOL (keeping my fingers and toes crossed).

When I left last night for my overnight scrapbooking workshop, dada was in charge. All I did was to give Mikey a night bath. Hb fed him, read him a book and put him to bed. When I came back at 4:45am, I just dropped my stuff on the floor, headed to bed and dozed off as soon as my head touched the pillow, then I didn't know what happened anymore between that time till the time I woke up. Dada was in charge! When Mikey woke up, hb got him, changed him and fed him breakfast. Then they went to the grocery to buy food. Now as I'm writing this post, hb is making lamb stew for dinner. Well he's making it in a crockpot so it will be ready by dinner ;-). I used to worry about leaving Mikey to dada for a long time, but when dada is in charge now, I don't have anything to worry about. He is taking being given the responsibility seriously, now he's cooking too, so this is fun ;-).

I Made It Through...

Scrap Around the Clock from 8:30pm to 3:51am! I left the house last night at quarter of 8pm to drive to my friend Yen's house and parked my car there. We just used her car to get to the scrapbooking workshop. The host Missy conducts monthly workshop on a weekend and marathon scrapbook like last night twice a year. It was my first time to attend and I had a blast. I met new friends and had so much laughs, they were funny. We made it through the night till wee hour of the morning scrapping, laughing and eating. We brought potlucks of food and also exchanged recipes, now not only did I have four pages done, I also had new recipe to try. Yen and I left the workshop at 3:51am and I got home at 4:45am. I was yawning through the drive and at the same time a little worried driving so late ( or too early morning) just by myself with not a lot of cars on the road, but I made it home, thank God.

Scrap Till I Drop?

I was busy like a bee since last night, trying to finish what ever is there to finish because I won't be sitting in my computer tonight. Yup, for a change I want to sit doing my scrapbook, that I haven't touched since May. Remember I committed to do at least a page a day? Oh well that commitment went down the drain when I packed up my scrapbooking stuff to clear the dining table before Mikey's birthday. I packed them so good, that I don't feel like taking them out of the package.

Anyway, the scrapbooking group that I joined in sometime in February invited me to Crop Around the Clock tonight that will start at 8:30pm Friday night till 5am Saturday morning. Although my dear hb was shocked when he learned how late the session will be, he still gave me go since Mikey will be in bed anyway at that time plus I need some (or another) outlet to unwind ;-). I'm not sure if I can stay that long really, or if my creative mind will still work so late. Well, my brain works most of the time blogging till the wee hour of the morning isn't it, so let's see. I'm so excited, I already packed some of my paraphernalia in a sturdy sack tote back and a carry on bag with wheels, so I can just wheel them out. I know its just too much to carry all these stuff, but I'm hoping to finish more pages tonight since I'll be with the other scrapbook addicts in the group, I should be fueled up ;-) Wish me luck guys!

Was Dead Tired

What's new? As I try to maximize profit from these blogs I've worked hard for, I've been losing the precious zzz's. Last night, I was beaten and dead tired, I just had to retire at 10pm. ( I always stay very late, as late as past 3am, no kidding.) I woke up so refresh and energized and ready for another busy day with my tot. Yardwork

The weather was perfect today, not very hot and sometimes overcast so I decided to work in the yard. It was perfect too that hb was working from home, because he was able to watch Mikey while I was out. I trimmed the bushes and edges of my flower beds. I also pulled out a lot of weeds, oh they grow so fast. Everyday whenever I water my plants I would pull out weeds, and everyday I'd see a new one grow. I had a lot done for the day, but I still have more yard work to do. I planned to make a new bed of herbs in the front lawn, its like a bed within a bed. I'm also thinking of widening the bed around the mailbox. I hope I can still work tomorrow, my arms and shoulders are sore from carrying the electric hedge trimmer and weed whacker.

Stinky No More

Our guest bathroom upstairs is also my son's bathroom. I used to have a diaper genie where I dumped his used diapers in but since its not working as effectively anyway, I just got rid of it and that saved me money for not buying plastic refill anymore. Now I just wrap the stinky diapers in plastic grocery bags before dumping them in the garbage bin. But after a while, awful odor from the bin builds up and it gets very stinky inside the bathroom. I can't believe I'm still up at this time, good thing I took a nap with Mikey today or else I won't be able to write posts for Social Spark. Out With My Girlfriends

My son was out with his little friends in the playground today, or should I say I was out with my girlfriends in the park today. My son and I were out today to visit my aunt. To save gas, we just used one car. We dropped off hb at work and then drove to my aunt's. I filled up my tank yesterday and came back home with a little more than half a tank of gas. The price of gas seems not to be going anywhere but up, and it certainly drives people nuts. Easy does it - You might enjoy flooring it at a stop light, but you're wasting gas and putting more strain on your car. Driving aggressively out on the highway can lower your car's gas mileage by 33 percent. Driving like a hot-headed teen around town can pull down your vehicle's fuel efficiency by 5 percent. So drive like a grownup. Slowly accelerate after every stop sign and stop light. Go easy on the accelerator out on the highway. Your car will thank you for it, especially if you drive an automatic. An automatic transmission runs better with gradual acceleration.

Be a smooth driver - Abrupt stops aren't great for your car or your car's fuel efficiency. So anticipate stops whenever you can. Letting your car coast to a stop is a good way to improve your gas mileage. Using cruise control out on the highway will help you maintain a smooth, constant speed and may boost your gas mileage. Becoming a smoother driver will help keep your fuel bills in check.Follow the speed limit. Speeding is a very expensive way to drive. Driving above the speed limit may get you where you want to go in less time, but it also means more trips to the gas pump. Driving at excessive speeds is going to pull down your fuel efficiency. And the faster you drive, the bigger the fuel-economy hit on your car. Driving 75 mph instead of 65 mph will lower your car's fuel economy by 10 percent. Go easy on the air conditioning - Roll down your car's windows and let in the summer breeze. Using the gas-hogging air conditioning as sparingly as possible will give your car's fuel economy a real boost. Air conditioning can drag down your car's fuel economy by 10 percent to 20 percent. On days when air conditioning is a must, first try cooling your car the old fashioned way -- rolling down the windows, opening the vents, peeling back the sunroof. You'd be amazed how much hot air you can clear out of your car just by opening up for awhile. Flipping on the air conditioning full blast as soon as you hop into a hot car is a big waste of gas and money.

Don't be idle - When you idle your car, its fuel economy crashes down to zero miles per gallon. The larger your engine the more gas you wind up wasting while idling your car. Get with the times. Modern vehicles don't need to warm up, so don't bother trying.

Watch your foot - Avoid resting your left foot on the brake while driving. The slightest pressure could cause a drag that will require additional gas. You'll also wear out the brakes sooner.

Gas Thieves

The skyrocketing prices of gas have really hurt a lot of people nationwide. The latest victim of the pain in the pump is a local post office in NH. Police said that gas from at least two US Postal Service delivery vehicles was siphoned out while parked outside the post office. One of the vehicles hit was the postmaster's government issued SUV. My girlfriend Joan called this evening 'again' to tell me about seeing police cars, K-9s and helicopters in her area and apparently there was an 18 year old guy shot by a drug dealer at the end of Stearns Street and the shooter fled in a car. People in the neighborhood were instructed by the police to stay home and don't come out because the shooter is obviously armed. Wednesday last week, Joan called us too to tell us the same thing, that there were police cars and SWAT teams in her area. But that time there was a guy who had a rifle with a scope who barricaded himself with his girlfriend in his apartment building. When I told hb the news, I was shocked that he suggested we drove by the area to snoop. Wow talked about asking for trouble, but I went anyway ;-) with Mikey who was already in his PJ ready to go to bed. We had a hard time driving through their street because cars were everywhere. It was like a social event because we met a lot of people, talked to them for quite a while and laughed off the whole thing, my other gf Lea was there too to complete the cast, LOL. We finally decided to go home and just watch the whole thing in the news on tv, but believe it or not until now I still haven't seen the story on tv though the guy apparently voluntarily gave up after shaking the SWAT, SO, and police from all over towns.

Serena Williams VS Venus Williams

As anticipated Serena and Venus will face each other at women's singles on Saturday at the Wimbledon 2008 Finals. It is an all-Americans, all-Williams women's finals at the All England Club. Serena won Wimbledon twice in 2002 and 2003 and both times were against her big sister Venus. Venus, the defending champion has won Wimbledon four times already. When they face off again in yet another exciting match today, Serena Williams is the favorite to beat her sister. Serena thus far enjoyed a more successful career in 2008 with a 30-3 record compared to Venus' 19-7. Serena has also won more Grand Slams and won all Slams at least once, whereas Venus currently has only 4 Wimbledon titles and a couple of US Opens, no Australian and French Opens. So who do you think will rule the tennis court? I am rooting for the younger Williams. Go, go, go, Serena!
